"I Don't Dance" is exactly the kind of name a wine wears when it knows it doesn't need to impress anyone — this gamay just gets on with the job of being delicious. Grown on Peramangk country at Maple Ridge in Hahndorf, it's 60% destemmed, 40% whole bunch, wild-fermented with a twelve-day cold soak before a slow press to neutral oak. Tart cherry, boysenberry, raspberry and a savoury green-olive twist, all riding a briny, cooling line of acidity. Chill it down, ignore the name, dance if you must.
