See ya later, Aligoté– this guy won’t stick around long. Bringing all the aromatic complexity we love Aligoté for, carried through on the palate. Hay, gooseberries, tarragon, flint, citrus. Fine acidity. Sylvain Pataille presses long and slow, gently awakening flavour, and uses indigenous yeasts. Unquestionably one of the greats, his grip of balance, texture and minerality turns the volume up.
