Stéphane Aviron didn’t follow Beaujolais into the Nouveau rabbit hole. She keeps to the slow lane, treating her biodynamic fruit from 50-year-old vines the classic way. This bottle boasts everything a Villages level cuvée should be—violets, raspberry, white pepper, a thread of savoury earth. Light, juicy and utterly bright.
