Wine merchant and natural side project enthusiast Chris Santini sources these Pinot Beurot grapes from Nolay, a small village west of the Montrachet, Santenay, and Saint-Aubin. It’s a tiny pocket planted entirely to Beurot since forever. A little skin maceration sees it drinking like its (close relative) skin-contact Gris. Apricot, zest, and a lick of tannin.
