In the Central Loire sits Cheverny, blessed with rich clay and limestone plains that support some remarkable vineyards. Emmanuel and Thierry Delaille of Domaine Salvard craft small(er) batch wines that pay the ultimate homage to this terroir, wines of terrific substance and heart. Tank-fermented and perfectly aged before release, some outrageously good stuff. Flavour bomb of red berries and pomegranate, plump on the palate but crunchingly fresh. Passed around the table, this won't last long.
