Why we love this interesting drink
Saison, season. Chef Dave Verheul has set his sights on making seasonal Aussie-style Vermouth, and this is a beauty destined for the esky or Alfresco. A base wine of Rutherglen Moscato is glammed up with elderflower and marigold, calendula and wormwood, apricots and peaches. Fresh rather than heavy, it’s intricate and charmingly variable saison to saison.
