Why we love this interesting drink
Matteo Rubino started this as a Christmas gift for mates, tinkering with herbs from the Lombard prealps until the hobby became the job. Organic wheat spirit steeped for weeks with chamomile, elderflower, nettle, caraway, dandelion root and hyssop, then pressed, cut with licorice water and rounded out with cane sugar and local honey before filtering. Bitter at the front, herbaceous and floral through the middle, honey on the finish. Alpine, unhurried, built by hand. One for the digestivo trolley.
