Tim Knappstein spent a lifetime building his name in Clare before heading south to the Adelaide Hills with his son — Riposte is the family's cooler-climate chapter, based up in Lenswood. The Katana comes off a single site in the Kenton Valley, pressed whole-berry and given a partial wild ferment in French oak barriques (25% new), then put through malo and left on lees to butter up. Think peaches, beeswax and a toasty hum, with the oak sitting just around the corner. Textural, layered, built to linger on the glass. A steady hand doing steady things.
