Forget what you think you know about retsina. This is the good stuff — piney and precise, none of the turpentine headache you might be bracing for. The Papagiannakos family has worked the Mesogaia plain outside Athens since 1919, now in the hands Vassilis, farming old-vine Savatiano on the flats near Markopoulo. Aleppo pine resin (sourced from the Kouvras forest) joins steely Savatiano. Think fresh lemon zest, rosemary and thyme, reminiscent of a dry gin martini. Drink it on ice with a splash of tonic and an olive or straight from the fridge. Ancient Greece, bottled with intent.
