Why we love this Wine
"Métisse" means hybrid, and Olivier Horiot is pretty takin by the idea. He organically farms eight plots of Kimmeridgian clay and limestone in Les Riceys, the forgotten edge of Champagne that sits closer to Chablis than Reims. The blend is 80% Pinot Noir and 20% of the rare Pinot Blanc, barrel fermented, aged a year on lees, topped up with twenty-odd percent perpetual reserve pulled from foudre. Zero dosage. White peach, crushed chalk, brioche, a thread of wild strawberry. Soaring, long, unapologetic.
