Why we love this Wine
Valmur sits in the thick of the Grand Cru slope, hemmed in by Vaudésir, Grenouilles and Les Clos, and this little 0.6-hectare pocket next to Raveneau is the coolest, most shaded corner of it. Horse-worked, planted in 1978, steep enough to hurt. Vinified in steel, not oak, so nothing softens the saline, mineral spine running underneath. Granny Smith, nashi pear, orange oil, beeswax, a long lemon finish with real tension and grip. Only 1,000 bottles made this year. Serious Chablis, built for the long haul.
