Frizzante, and frisky about it. Salvatore Giardina makes his wines on Etna's north slope in Randazzo, where the local bar owner turned winemaker farms old vines and lets nature do most of the talking β hand-picked, spontaneous ferment, nothing added to smooth the edges. This one's Zibibbo given the frizzante treatment: a lightly sparkling pΓ©t-nat style with a touch of skin contact, so expect texture as much as fizz. Lemon pith, dried herbs, a fine mousse. Volcanic bubbles.Β
