Grower fizz from a family who've worked Mareuil-sur-Aÿ since 1963. Jean-Paul Hébrart took over from his father Marc in 1997 and has kept the focus tight: 100% Chardonnay, mostly from Mareuil-sur-Aÿ's premier cru slopes with a splash from the grand cru chalk of Oiry and Chouilly. The result splits the difference between Chardonnay's usual camps — all the citrus cut you'd expect, backed by something riper and rounder. Pear, white flowers, a savoury, bready edge from time on lees. Precise without being austere.
