Sam has sourced the grapes for lo-fi modern hero from Gungadai’s Tumblong Hills vineyard. Leaning into the natural acidity of the grape, 90% whole berries and 10% whole bunches precede 21 days on skins for a little grit, while eight month in seasoned French barriques rounds it all out. Gorgeously gluggable.
