Producer of fine organic Cava, Mainegra, sits north of Spain's Zaragoza in Navarra and is home to a lengthy and lauded sparkling wine tradition. Think the elegance of Champagne, but the feisty soul of a Spaniard. Their Brut Cava rests on lees over more than a year, imparting depth and texture to what is otherwise a lively, acid-driven wine. A sherbert bomb of preserved lemon and tart green apple, blending Macabeo, Xarel-lo and Parellada. Very pretty perlage as the wee bubbles dance in the glass. Sets a stellar standard for the region.
