Why we love this interesting drink
Not ya nan's evening sherry (or if so, we'd love to knock one back with her). Palomino grapes, used to make Oloroso, sweetened somewhat with 20% Pedro Ximénez. Each wine matures separately in solera casks over 12 years, then returns to a 45 solera cask for an additional 3 years ageing post-blend. Back in the day, sherry casks lashed to ships as ballast turned out wines of notable smoothness and nuance, a style now recreated in Jerez, Spain. Figs, sticky date pudding, dark chocolate. Forget dessert, this is better.
