Why we love this Wine
This comes from Laurent Saillard, the ex-chef from NYC’s Ici, one of the first natural wine bars. 100% gamay from 38-year-old vines. A whole-bunches (carbonic maceration) in an oxygen-free environment. Aged half in stainless steel and half old vats for 6 months. Nothing fancy, just effortlessly good. The world needs more of this.
