You've tried Fiano originale, now try Fiano Minutolo. All delicate florals and pronounced minerals, this is a variety distinct from the classic Mediterranean white you know and love. Valentino Dibenedetto is king of the minimalist approach, both in his biodynamic, no-till vineyards and the winery. Low intervention spontaneous ferments, unfined, unfiltered, low sulphites, vegan friendly. This is a breezy white with a certain briny, marine quality, but alongside more robust flavours of fruit and honey. Still dry though, and fresh as you can get.
