Schist-yeah. La Prova's 2024 Uno Fiano comes from the Amadio’s Kersbrook vineyard in the Adelaide Hills, grown on sandy loam over schist. Whole-bunch pressed, wild-fermented in old French puncheons, and left on lees, it’s unfined and unfiltered, with to-die-for mouthfeel. Fruit is in the background, but this is all about the supple, mineral-driven palate that lingers elegantly. Tiny production run, huge personality — a Fiano for the fans.
