Here we’ve got organic King Valley Chardonnay, planted by viticulture rockstar Dr Jim Hardie and cared for by Konpira Maru for five happy seasons. Its cool climate and slow ripening period bestow gorgeous acidity and super defined ripe citrus, while time in various oaks at various levels of toast laces the grapes with little hints of vanilla pastry and manuka honey.
