Why we love this Wine
Blanc de Sable is a magic trick disguised as a sparkling wine — a red grape pressed off its skins until it forgets it was ever red. Kir-Yianni pulls Xinomavro (with a whisper of Chardonnay) from poor, sandy vineyards near Amyndeon's lakes, high altitude keeping the acid sharp and the sugars lean. Traditional method, minimum twelve months on lees, disgorged and left to speak for itself. Green apple, citrus, red berry, a savoury brioche edge. Pale in colour, anything but plain in character. Sneaky good.
