Montrachet, Chevalier, Bâtard — Puligny-Montrachet's Grand Crus read like a hall of fame for chardonnay. This is the village wine, made by someone who won't let the label do less than its best. Six generations of Chavys have farmed here since 1820, though estate bottling only started in 1986. Jean-Louis has run the domaine since 2002, son Paul now beside him — the same precision at village level as further up the ladder. White peach and citrus blossom lead into a flinty, wet-stone minerality, a whisper of hazelnut creeping in on the finish. Saline, taut, acid-driven rather than fruit weight or oak. Long finish, no fat to hide behind. Puligny, undiluted.
