Jean-Claude Rateau has the most famous moustache in Burgundy and the CV to match — he converted his vines to biodynamics back in 1979, and he's been the region's godfather of the practice ever since. Clay-limestone soils around Beaune, traditional Chardonnay, minimal sulfur, nothing forced in the cellar. The result is buttery and layered without being heavy — stone fruit, baked apple, a creamy mid-palate with real cut underneath. Old-school Burgundy, made the hard way.
