The crew behind ICARO are four Rome-born friends who turned Castelli Romani's volcanic dirt into something worth drinking, farming organically and naming the project after the hills themselves. Trebbiano, Malvasia and Nero Buono go in whole-cluster, carbonic, no messing about, just steel and patience. Wild strawberry, blood orange, and a touch of honeycomb with subtle grip. Acid-driven, youthful, built for the table that's a little too loud already.
