The D’Anna have a name for the highest and steepest block of Chardonnay on their estate on the Yarra Valley. They call it Syberia and its lean, tight fruit has spent nine years on lees before being released as a stunning Blanc de Blancs Sparkling wine. With fine, energetic bubbles and crisp, detailed aromas and flavours of crisp apple, apple pastries and proving dough, clotted cream and notes of honey and spice, it’s an expansive, racy and undeniably excellent addition to the lineup of Australian sparkling wines.
