Grenache and Mataro, 30% whole bunch, 28 days on skins — long enough to pull real depth without tipping into heavy. Cherry, wilting florals, wild fennel up top; underneath, gypsum-like tannins, chalky and firm, holding the bright fruit in check. Tightly coiled now, built to loosen up with time in the cellar.
