Gvantsa Abuladze makes this with sister Baia and brother Giorgi on the family's land in Obcha, deep in Georgia's Imereti region — four generations growing vines here, no separate day job required.
Fermented the old way: skins in, submerged in qvevri (buried clay vessels, Georgia's answer to everything before oak barrels existed), left to work on wild yeast. Imereti's humidity keeps the fruit high-acid, low-sugar, so despite the ink-dark colour this stays medium-bodied — red cherry, raspberry, a dusting of spice. Silky tannin, a mineral finish that reads more riverbed than fruit bowl.
