Castelfranco Emilia, outside Modena, is where Marco and Antonella have been doing this since the 80s — certified organic, no shortcuts. The Rosso is 100% Lambrusco Grasparossa, finished metodo ancestrale: a single fermentation, bottled before it's done, no dosage, no sulfur. What comes out is a touch cloudy, bone dry and alive — blackberry, violet, a twist of dried thyme, savoury earth running up the fizz. Old-school Lambrusco, done properly.
