The story goes, the land was previously used by retired monks to rest with a cellar nearby. A concept we can envision easily. This is Cabernet Sauvignon from Toscana, succulent and layered. Organic and biodynamic viticulture. Wild fermented in concrete tanks, and aged in terracotta amphorae. Floral and fruity. Cherries and flinty mineral notes. Leisurely drinking with comforting length.
