Why we love this Wine
We talk a lot about Eden Valley Riesling, not enough about its Chardy. 30 year old vines in Springton supply the fruit for this ever-so-slightly skinzy, single vineyard white. Whole bunch pressed to second fill and seasoned French barrels, there's a lot to talk about here texture-wise. Light lees ageing and malo give plenty of complexity; think cashew cream, toast and a citric edge. Chardy party of one, please and thank you.
