Paul Nicolle’s Chablis is the style your mind conjures when someone says Chardonnay from northern Burgundy; clean, fresh, quietly stunning. 30-40 year old vines growing from limestone soils produce tantalising grapes just asking for a little malolactic fermentation. Raised on lees for 8-12 months, pretty blossom notes, a chalky minerality and aromatic orchard fruit underpin fresh citrus and luscious honey. We’re certainly backing it.
