Why we love this Wine
Couturier dresses it down with this Pouilly-Fuissé. Blendsing Clos Reyssié in Chaintre, over 80-year-old vines on clay and limestone, with Les Scellés in Fuissé, 50-year-old vines on schistous clay facing east. Whole bunches, pressed gently, fermented in barriques (20% new), fifteen months on lees — longer than the estate norm, because this fruit lives for it. Ripe apple, apricot, hawthorn blossom, candied lemon. Silky, dense, generous, with a chalky mineral finish. What can we say? J'adore le Fuissé!
