Why we love this Wine

Gevrey-Chambertin has more Grand Crus than any village in Burgundy — nine of them, stacked up the slope like a hierarchy. This plot sits below all of it, just under Premier Cru Champeaux. Four generations of Collottes grew grapes in Marsannay before any of them bottled their own wine — Philippe did it first, aged sixteen, in 1981. Daughter Isabelle's been alongside him since 2013. Fully destemmed fruit, a cold soak before fermentation, sixteen months in French oak, barely filtered. Red and black cherry, dark berry underneath, a savoury spice and earthy mineral thread running through — older vines (pushing sixty) giving it depth without asking for credit. Structured, powerful, fine-grained tannin keeping the whole thing composed rather than showy.
