A classic for a reason; it's hard to go past Dom with more than a decade of ageing under its belt. Full-bodied fizz that has just entered its prime-drinking years, but will cellar well for at least another twenty. 51% Pinot Noir brings bright raspberry and cherry profile, 49% Chardonnay offers chalky texture and lighter, tropical notes. Ethereal smokiness just emerging on the nose, becoming more pronounced with maturity of the wine. Based on Grand Cru villages, plus one Premier Cru (Hautvillers, home to that historic Abbey where one Benedictine monk perfected his craft centuries ago.).
