COS stands for the family names who founded this estate in 1980: (Giambattista) Cilia, (Giusto) Occhipinti and (Cirino) Strano. All organic and biodynamic, in large 150-litre terracotta amphoras. Authentic and individualistic wines, this is supple and rounded, grippy and spicy, herbal and fresh. An orange wine to get you thinking, hooked, and coming back.
