Pineau d’Aunis: light on its feet, quietly complex, very moreish. Semi-carbonic, wild-fermented and raised in old wood, the Touraine local legend Thierry Puzelat's take is hazy but freshly flavoursome. Think red berries, red apple skin and a crackly pepper note. High acid, low alcohol, no sulphur additions — his Clos du Tue-Boeuf domain has been organic since 1996. There’s depth with lots of brightness here, and great, savoury guts.
