Fiano isn't known as a bubbly breed, but if anyone can make it happen, the Chalmers can. This is the family that's spent decades championing alternative Italian varieties across Australia (they started a wine show dedicated to just that). Hand-picked, fermented in stainless for freshness, then 37 months on lees before disgorgement with zero dosage. It's giving toasted brioche, golden apple, white and yellow florals, a saline snap on the finish. Nutty and toasty and creamy and bright. Serious, in the best way.
