Pelješac's answer to texture. Bura's Rukatac — also known as Maraština — comes off century-old family vines on the peninsula's inland flats, red soil and clay stones sitting over limestone. Hand-picked, destemmed, fermented spontaneously on skins for about a week in open vats before resting quiet in steel. Low intervention, barely any sulphur, no fining. Green apple, apricot, a savoury mineral streak and something faintly salty. Textural, a little grippy, nothing shy about it. Summer sipping must-have.
