Barolo-grown Nebbiolo enjoys the cult-like devotion of its adherents, and while the DOC region's translucent, aromatic reds are hard to surpass, those same aromatic properties make for an otherworldly experience in a lighter wine. While vinifying Nebbiolo as a red, 2% of the red grape's juice is decanted following a single night on skins, to continue its fermentation at 20°C. Temps are kept low to inhibit malo-lactic fermentation, preserving the lighter wine's freshness and focus. This is a far cry from Provence rosé, the Italian style of pink-wine favours exuberance, body and flavour to rival a red. Strawberries, pomegranates, white pepper, magnifico.
