Sanlúcar manzanilla from one of the oldest bodegas in Jerez, pouring since 1789. 100% palomino fino off albariza soils in Balbaína Alta, aged under a thick blanket of flor in cellars close enough to the Atlantic to taste it. Four criaderas, four years average age, no corners cut. Chamomile, green almond, sourdough and salt, finishing on a citrus snap. Pale, bone dry, properly saline. The kind of sherry that makes you wonder why you don't drink more of it.
