Pošip is getting harder to find in Dalmatia — the tourists on Korčula are drinking the island dry. So this one's sourced further north and inland, on sandy, windswept ground that gives it brighter acid and lift than the usual coastal expression. Made by the Bura family, who've farmed Pelješac's slopes for generations, fully organic, no irrigation. Grapes picked slightly raisinated, destemmed, fermented naturally in open vats with hand punchdowns, three days on skins. Debit and Maraština round it out, with a splash of Trbjan. Pear, briny minerality, Adriatic herbs, citrus bite. Ancient grapes finding new ground.
