Liam O'Brien built this off one spark: an Occhipinti orange wine that rewired how he thought skin contact could work. No shortcuts since — 180 to 220 days on skins, seeds and lees, however long the vintage asks for.
Pale amber, slightly hazy. White pepper, apricot, preserved lemon up top; pear, oolong tea, clay-like earth underneath. Not heavy-handed tannin — just a persistent, savoury grip riding the finish.
