Patrice Béguet has a background in mathematics and it shows. From the wild flowers he sows between his vines, to the alpine sheep he grazes in winter. Execution is everything. Handpicked grenache blanc, melon de b and chardonnay. Native yeasts, skins in barrels, and no sulphites or filtration. From apples, to blossoms and spices. A lot to calculate.
