Under his label Minim, Tim Sporal says the slow to ferment 2020 Fiano was a labour of love. The Italian grape thrives in Heathcote and other Mediterranean-esque parts of Australia. Barrel aged for 10 months in seasoned barriques and aged in tank for seven more, it’s full bodied and direct. Lap up flavours of rockmelon, lemon and ripe apricot.
