A protégé of both Jean-Claude Lapalu and Mathieu Lapierre, winemaker Jérôme Balmet now works some 3.5ha of vines organically and biodynamically. A super-lo-fi production mostly in old concrete tanks, the fruit goes from vineyard to bottle with no additions at all. The product of a steep slope, this is so light and fresh, while herbaceous and serious.
