We’re talkin slow, oxidative handling, wild fermentation, full solids and a very hands-off lo-fi approach here, for a smooth, textural take on what we reckon is Australia’s most under-valued grape variety. Limey and spice-laden with a vivid acid line and just the right amount of funk. Sizzling!
