Matt Dunne is one of Australia’s key industry speakers and wine educators. His experience spans over decades, from his early days working alongside celebrity chef Matt Moran from Aria Sydney to over 15 years heading up beverage for the Solotel Group in Sydney (think North Bondi Fish, Chiswick and Opera Bar). Matt boasts a list of impressive career accolades including Good Food Guide Sommelier in 2011 and being awarded the coveted Len Evans Scholarship in 2015.

Matt’s genuine passion and aptitude for sharing his wealth of knowledge shines through and it’s no wonder he has become a wine voice with true cachet.

“Chilled reds combine the food pairing potential of red varieties with the cool appeal of a white or rosé. Typically, the lighter & brighter the better, but chilling emphasises tannin and oak, so be careful to serve a well-structured red only a few degrees cooler than usual” - Matt Dunne

“Ripe cherries and wild strawberries lead from the front here. Winemaker Sam Coverdale has created his own stamp on the Peninsula. The palate is red fruit focused with floral notes, dry forest floor undertones and a hint of smokiness. A fine and persistent acid line carries the fruit characters through with the fine grain tannins, creating a complex yet savoury finish. A wine which will continue to build in the glass, and in the bottle. The char characters means that anything smoky when it comes to protein works a treat. Chimichurri steak is my go to with this wine!” 


“Being from the Snowy Mountains I have a major soft spot for wines that are close to home. Vibrant cherry fruit aromatics overlay a subtle mix of charry, meaty spice notes. The palate is juicy and plush, with long fine tannins giving food-friendliness and texture without drying the finish out. Fish… yep go on! Battered fish and chips can actually work well with chilled reds, especially from grapes that have natural high acidity like sangiovese. Winemaker Chris Carpenter is consistently pushing boundaries. Love it and one to watch!” 


“Il Rosso comes from a small, mixed plot of native Nerello grapes and the unlikely Grenache, thought to have been imported by earlier Bourbon kings. Mirella Busemi (Alberto Graci’s wife) is a trained chemist and Sicilian native. This is a super pretty example with cranberry, rhubarb, and a crunchy, edgy finish. Light and zesty, drink this with beef tartare or vegetarian tacos with some chilli paste. A wine that can certainly handle some heat!


“Something for new world red drinkers to attach themselves to! A little gem from the old world. The cuvée La Voûte St Vincent comes from parcels located on the excellent Douby lieux-dit. Dominated by Château Gaillard and Roche Noire, this appellation area is located on the northern part of the estate, almost on the outskirts of Fleurie. Ripe raspberries, dried rose petals, mocha and spice. A richer style, but mighty fine to drink by itself or for the mid-week pizza delivery. And yes, seafood pizza is a thing and can work well alongside this wine.


“Located in Cahors, an idyllic village outside Bordeaux. Fabien Jouves, the Malbec Maestro, practices biodynamics and winemaking is also carried out naturally without oenological inputs, in concrete vats, barrels and casks according to each wine’s personality. You Fuck My Wine is a blend of Jurancon Noir and Malbec, from 50 year old vines. Fresh and frisky with bright plummy raspberries, with a touch of green herbs and spice. A modern take in an old-school wine region. Firing up the BBQ with some pork spare ribs tonight!


“Made by Yarra Valley legend, Tony Fikkers. Think wild red berry compote on the nose, a brambly tangle of strawberries and raspberry. Bluestone and a sanguine, ironstone character denote its mineral, savoury edge. The palate begins all fleshy, soft and plump, with blueberries and a tang of rhubarb at the fore, but fine chalky tannins flow gently into the uber-refined, slatey mineral finish. Sleek and refined – drink with cured meats and Sicilian green olives. A visit last year has me hooked on this wine!
